Ingredients for 1 servings:
- 5 kg cucumber(s), yellow
- 500 g sugar
- 50 g salt
- 150 g mustard seeds
- 20 g peppercorns
- 4 bay leaves
- 500 g shallot(s)
- 1 bottle of vinegar
- horseradish, to taste

Peel the cucumbers, scrape out the seeds, and cut the flesh into pieces. Mix all ingredients, including the cucumbers, thoroughly in a large container and let stand for 24 hours. Stir frequently. Then pour into jars and store.
