Ingredients for 10 servings:
- 200 g carrot(s), grated and squeezed
- 2 eggs
- 10 g sweetener
- 40 ml oil
- 100 g flour (whole wheat flour)
- 1 tbsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg

Whisk the eggs and sweetener until frothy. Stir in the carrots, oil, cinnamon, and nutmeg. Finally, fold in the flour mixed with the baking powder. Pour the batter into a baking dish lined with baking paper and bake in the oven at 180°C for approximately 20 to 30 minutes. For this recipe, 1 serving equals 1.5 points.
