Fake fillet cooked sous vide

Ingredients for 4 servings:

  • 1 kg beef shoulder (false fillet)
  • 2 tbsp butter
  • 2 tsp thyme
  • 1 tsp black pepper
  • 2 garlic cloves

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 30 minutes

Normally, fake fillet tends to be tough, but not this way.

Unwrap the fillet and pat dry. Trim the meat nicely. Rub it with butter to help the pepper and thyme stick to the meat. Place the fillet with the crushed garlic in a vacuum bag and vacuum seal. Place the fake fillet in the sous vide device at 54°C and leave it there for two hours. After two hours, open the bag and grill over direct heat for 2-3 minutes on all sides. Let the meat rest for about 3-5 minutes after grilling, then it’s ready. Finely sliced, for example, as an appetizer, it’s absolutely delicious.
