Ingredients for 2 servings:
- 100 g arugula
- 2 servings of penne
- 1 onion(s)
- 1 clove(s) garlic
- 1 pack of mozzarella
- 1 can/n tomato(s) Pomodoro
- Fresh Italian herbs, chopped (or herb leaves)
- salt and pepper
- 1 tsp tomato paste
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cook the penne and refresh while still al dente. Dice the onion and fry in olive oil and tomato paste. Finely chop the garlic with salt and mash it to form a paste. Add it to the onions. Add the washed and slightly chopped arugula (remove any long stems first) and fry briefly. Then add the can of Pomodoro tomatoes seasoned with salt and pepper and season with herbs. Combine the penne and arugula tomato sauce, transfer to a baking dish, and tear the mozzarella and arrange it on top. Now bake in the oven until the mozzarella is well melted (about 10 minutes)…and delicious.
