Ingredients for 4 servings:
- 200 g millet
- 200 ml vegetable stock
- 300 g quark (low-fat)
- 2 tbsp oil
- 2 eggs
- 150 g cheese, grated
- 1 bunch of mixed herbs, alternatively 1 pack of frozen herbs
- 2 tomatoes
- some paprika powder
- nutmeg
- salt and pepper
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Cook the millet in the vegetable broth according to the package instructions and let cool. Combine the quark with the eggs, oil, and spices. Stir in the millet. Pour the mixture into a greased casserole dish. Slice the tomatoes and top the casserole with them, then sprinkle with chopped herbs and finally the cheese. Bake in a preheated oven at 170°C for 40 minutes. This goes well with steamed seasonal vegetables or a mixed salad! While the casserole isn’t dry, it can still stand a juicy side dish.
