Ingredients for 4 servings:

  • 4 eggs, separated
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 500 g quark
  • 100 g flour
  • 50 g soft wheat semolina
  • 50 g butter
  • 100 ml milk

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

The world’s best quark casserole – rises beautifully!

Beat the egg yolks and sugar until frothy. Add the quark and mix. Add the flour, semolina, and vanilla sugar and mix again. Beat the egg whites until frothy and fold them loosely into the batter. Pour the milk into a baking dish and scatter the butter in small pieces. Pour the batter over the batter. Bake in a preheated oven at 180°C (top/bottom heat) for about 40-45 minutes. Tips: I always sprinkle a sachet of vanilla sugar over the batter before placing it in the oven; this creates a delicious crust. You can also add any kind of fruit or eat it with compote.
