Ingredients for 1 servings:

  • 500 ml balsamic vinegar bianco
  • 5 sprig(s) lavender, fresh

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and dry the fresh lavender sprigs. Bend them two or three times and place them in a wide-necked bottle. Pour the white balsamic vinegar over them, seal, and let stand in a sunny spot for at least three weeks. Shake well daily. Then pour through a coffee filter, squeeze the sprigs thoroughly, and pour into a clean bottle. The vinegar tastes great as a salad vinegar, but also adds a flavor boost to tomatoes and mozzarella. Rosemary or thyme can also be used instead of lavender. It’s important that the herbs are fresh—do not use dried ones.
