Special herb butter with Parmesan

Ingredients for 4 servings:

  • 250 g butter
  • 2 tsp, heaped beef bouillon, instant
  • e.g. pepper, coarsely ground
  • 2 dashes of Tabasco
  • 1 clove(s) garlic
  • 2 tbsp, heaped garden herbs, frozen
  • 2 tbsp, heaped Parmesan, freshly grated

Working time approx. 15 minutes; Total time approx. 15 minutes

Allow the chilled butter to soften – place on a warm radiator for 10 minutes or in the oven at 50°C for a few minutes. Then cut into thirds and place in a mixing bowl. Press in the garlic clove and add the herbs. Add 2 teaspoons of beef bouillon (I use Knorr – for me it has to be this one and no other!) to the bowl. Add a little pepper, if desired. Add 2 dashes from the small bottle of Tabasco. Finely grate some fresh Parmesan cheese, about 2 tablespoons. Then mix with a mixer, first slowly, then faster, until everything is well combined, about 30 seconds. Transfer to a suitable small bowl; this works well with a spoon, then press into the bowl with a fork and smooth it down.
