Ingredients for 4 servings:
- 1 m.-large zucchini
- 2 bell peppers, yellow and red
- 2 tomatoes
- 2 bags of rice, or 250 g loose rice
- 500 g minced meat, mixed
- 200 g sheep’s cheese
- 2 tbsp cream cheese, plain or e.g. brunch paprika-pepper
- salt and pepper
- Paprika powder
- Spice mix (minced meat seasoning)
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Cook the rice according to the package instructions. Slice the zucchini, and dice the bell peppers and tomatoes. Dice or crumble the feta cheese. Season the ground beef and brown it. Add the vegetables and brown them. Stir in the cream cheese, season the mixture again, and let everything simmer for a bit. Finally, stir in the rice and feta cheese and simmer everything together for about 2 more minutes. Tip: Using brunch paprika and hot peppers makes the dish spicier. If children are eating with you, plain cream cheese is best.
