Tomato salad with roasted onions and fried zucchini in mustard dressing

Ingredients for 4 servings:

  • 500 g cherry tomatoes
  • 1 large onion(s)
  • 1 tbsp oil
  • ½ small zucchini
  • 1 tbsp oil
  • 2 tbsp Balsamic vinegar bianco
  • 1 tbsp oil
  • 1 tsp mustard
  • e.g. salt and pepper
  • n. B. herbs, fresh chopped (e.g. chives, parsley..)

Instructions

Working time approx. 12 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 22 minutes

Peel and dice the onion. Heat oil in a pan and fry the onions until golden brown. Wash and slice the zucchini. Fry in oil. Let cool. Mix the dressing and season to taste. Wash the tomatoes, remove the stems, and halve them. Combine all ingredients and serve in bowls.
