Salmon in champagne sauce

Ingredients for 2 servings:

  • 2 salmon fillets
  • 1 tbsp butter
  • 100 ml sparkling wine, dry
  • 100 g crème fraîche
  • 1 bunch of chives
  • salt and pepper
  • Cayenne pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Fry the salmon slices in hot butter over medium heat for about three minutes on each side. Remove, season with salt and pepper, and cover with aluminum foil. Deglaze the pan juices with sparkling wine and reduce over high heat until reduced by about half. Stir in the crème fraîche and season the sauce (carefully) with a little cayenne pepper. Finally, add the finely chopped chives to the sauce and serve with the salmon. Serve with rice. Sauce lovers can also use a little more sparkling wine and crème fraîche.
