Chocolate Rum Muffins

Ingredients for 1 servings:

  • 175 g butter
  • 150 g dark chocolate
  • 200 g wheat flour
  • 1 tsp, leveled baking powder
  • ½ tsp baking soda
  • 2 eggs
  • 125 ml milk
  • 2 tbsp rum
  • 1 small zucchini (approx. 150 g)
  • 125 g sugar
  • Paper cups
  • possibly chocolate glaze

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

makes 12 pieces

Preheat the oven to 175°C (top/bottom heat: 150°C). Meanwhile, melt the butter and chocolate together and let cool slightly. Wash and finely grate the zucchini. Place paper baking cups in the muffin tins. Mix together the flour, baking powder, and baking soda. Stir the sugar into the chocolate mixture, then add the egg and milk, then the flour mixture. Pour the batter into the paper baking cups. Bake for 20-25 minutes. Remove the baking sheet, remove the muffins from the cups, and let cool on a wire rack. If desired, frost with chocolate icing.
