Cherry dessert with brittle

Ingredients for 6 servings:

  • 90 g sugar
  • 4 tbsp butter
  • 150 g almond(s), chopped
  • 300 g cream cheese (at least 60% fat)
  • 150 ml milk
  • 80 g sugar
  • 1 packet of vanilla sugar
  • 150 ml sweet cream
  • 1 pack of cream stiffener
  • ½ jar sour cherries (720 ml), pitted

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For the brittle, caramelize the sugar over low heat while stirring. Now stir in the butter and almonds, taking care not to let the sugar get too dark, as otherwise it will taste bitter. Remove the pan from the heat immediately. Pour the mixture onto baking paper, spread it out, and let it cool. Then break it into pieces. For the topping, beat the cream cheese with the milk, sugar, and vanilla sugar until smooth. Whip the cream with the cream stiffener until stiff peaks form and fold in the cream cheese. Drain the cherries. Layer the cream cheese mixture with sour cherries and brittle into glasses, starting with the cherries and brittle and ending with the cream cheese. Garnish with brittle. Refrigerate for about 2 hours before serving.
