  • 250 g crab meat
  • 4 eggs, hard-boiled
  • 1 egg yolk
  • 1 tsp mustard
  • some salt
  • 1 tsp sugar
  • 1 tbsp vinegar or lemon juice
  • 125 ml oil, neutral

For the mayonnaise, combine the egg yolks, mustard, salt, sugar, and vinegar (lemon juice) in a mixing bowl and whisk until thickened. Whisk in the oil. For this recipe, it’s not necessary to add the oil drop by drop; simply whisk it in in 1-2 tablespoons. The spices added to the egg yolks prevent curdling. Thicken the crab and sliced ​​eggs (add a little salt if desired) with the mayonnaise. Arrange the salad on lettuce leaves and garnish with sliced ​​tomatoes.
