  • 1 tbsp mustard
  • 2 small gherkins
  • 2 onions
  • 1 tbsp capers
  • 8 peppercorns
  • 2 small bay leaves
  • 250 ml vinegar
  • 125 ml water

Instructions

Working time approx. 35 minutes; Rest period approx. 6 days; Total time approx. 6 days 35 minutes

Soak the salted herring for 12-24 hours, debone, and wash. Brush the halves with mustard, top with sliced ​​cucumber, finely chopped onions, and capers, carefully roll them up, and secure them with a wooden stick. Place the herring in a small stone pot with the peppercorns and bay leaves. Mix the vinegar with the boiled, cooled water and pour over the herring. They are ready to eat after 4-6 days.
