Ingredients for 4 servings:
- 250 g crab meat
- 4 eggs, hard-boiled
- 1 egg yolk
- 1 tsp mustard
- some salt
- 1 tsp sugar
- 1 tbsp vinegar or lemon juice
- 125 ml oil, neutral

For the mayonnaise, combine the egg yolks, mustard, salt, sugar, and vinegar (lemon juice) in a mixing bowl and whisk until thickened. Whisk in the oil. For this recipe, it’s not necessary to add the oil drop by drop; simply whisk it in in 1-2 tablespoons. The spices added to the egg yolks prevent curdling. Thicken the crab and sliced eggs (add a little salt if desired) with the mayonnaise. Arrange the salad on lettuce leaves and garnish with sliced tomatoes.
