Ingredients for 1 servings:

  • 750 g flour, type 405
  • 20 g baking powder
  • 15 g baking soda
  • 10 g salt
  • 180 g sugar, brown
  • 180 g sugar, white
  • 3 tsp cinnamon powder
  • 120 g currants, or sultanas
  • 120 g cranberries, dried
  • 150 g mixed nuts, coarsely chopped

You will also need 6 large screw-top jars with a wide opening, each with a capacity of 440ml. Thoroughly mix the flour with the baking powder, baking soda, and salt. This is best done with a whisk. Divide this mixture among the 6 jars, approximately 130g per jar. Add 30g of brown sugar to the flour, followed by 30g of white sugar. Then add 1/2 teaspoon of cinnamon to each jar. Mix the currants with the cranberries and add 40g to each jar on top of the cinnamon. Finally, spread 25g of the nut mixture over the berry mixture. Close the jars. This way, the mixture will keep for at least 4 months. 1 jar contains 2 servings. The berries can be substituted for dried blueberries, and the nuts can also be used according to taste. This ready-made mix also makes a popular gift or souvenir.
