Ingredients for 2 servings:

  • 2 portions of fish fillet(s) (pangasius fillet)
  • 1 can of tomatoes
  • ½ bell pepper(s)
  • 1 handful of olives, black
  • olive oil
  • basil
  • oregano
  • garlic powder
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat some olive oil in a pan. Chop the tomatoes and add them with their juice. Finely dice half the bell pepper, chop the olives, and add both to the tomatoes. Season with basil, oregano, garlic, salt, and pepper. If using fresh basil, add it at the end. Add the pangasius fillets to the sauce and simmer for about 15 minutes. Serve with baguette and a fresh salad.
