Ingredients for 6 servings:

  • 200 g ham, cooked
  • 30 g capers
  • 50 g gherkins
  • 1 bunch parsley, flat
  • 2 tbsp soy sauce
  • 3 tbsp sherry
  • 5 tbsp vinegar
  • 4 ½ sheets of gelatin
  • 250 ml meat broth
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

Trim the ham of any fat and cut into small cubes. Finely chop the parsley and capers. Finely dice the cucumber. Season the broth generously with sherry, vinegar, soy sauce, salt, and pepper. Heat until the soaked gelatin dissolves. Mix with the remaining ingredients and pour into a suitable dish. Refrigerate overnight. I fill it into a silicone mat, similar to a mini muffin tin. A light chive cream goes well with it.
