Low-calorie sauce for asparagus

Ingredients for 2 servings:

  • 150 g yogurt, 0.1% fat
  • 1 tsp mustard, medium hot
  • salt and pepper
  • some milk, 1.5% fat
  • some locust bean gum (also Bindobin)
  • 1 bunch of chives
  • some lemon juice

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Using a small whisk, thoroughly mix the yogurt with mustard and about 50 ml of milk and season with salt and pepper. Thicken this relatively liquid sauce with a little locust bean gum. About 1 level teaspoon is enough; taste a little first and wait, as it will thicken. Stir in the locust bean gum well, also using a whisk. Fold in the finely chopped chives and season everything with lemon juice. Be sparing with the lemon juice, however, as the yogurt already gives the sauce a tart flavor. Refrigerate until ready to use. Tip: If you’re not so conscious of calories, sour cream tastes great instead of yogurt! Then you don’t need locust bean gum; you can adjust the consistency to your liking with just the milk. The sauce can be served with asparagus, but it’s also delicious with just potatoes.
