Meatloaf with bean and tomato sauce

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 2 eggs (size M)
  • 100 g breadcrumbs
  • 1 tsp oregano, dried
  • 2 tsp sweet paprika powder
  • some salt
  • some pepper
  • 4 tbsp oil
  • 1 onion(s)
  • 1 can white beans (250 g drained weight)
  • 1 can of chopped tomatoes (420 g)
  • 2 bay leaves
  • some sugar
  • 80 g bacon (sliced)

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes

In a bowl, mix the ground beef, eggs, breadcrumbs, oregano, paprika, a generous pinch of salt, and pepper until smooth. Heat the oil in a roasting pan. Shape the ground beef into an oval loaf and fry over medium heat until light brown on all sides, turning carefully. Meanwhile, peel and dice the onion. Drain the beans in a sieve, rinse with cold water, and let drain. Transfer the meatloaf to a plate. Sauté the diced onion in the pan juices. Add the tomatoes, beans, and bay leaves. Bring to a boil and season with salt, pepper, and a pinch of sugar. Place the meatloaf on the sauce and top with the bacon slices. Cook on the rack in the lower third of the oven at 180°C for 45 minutes (convection not recommended). Serve with mashed potatoes.
