Lemongrass Chai Latte

Ingredients for 4 servings:

  • 5 stalks of lemongrass
  • 5 kaffir lime leaves
  • 10 cardamom pods
  • 10 cloves
  • 2 tsp ginger powder
  • 2 tbsp honey
  • ¾ liter of milk
  • ¼ liter of water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

cold and hot a delight

Lightly crush the lemongrass, cardamom pods, and kaffir lime leaves in a mortar and pestle. Combine the milk and water, along with all other ingredients, in a saucepan and simmer for about 30 minutes. Never let it boil completely! Strain the liquid through a sieve (I use a fine mesh sieve) and pour into a jug. Now either keep warm on a stovetop and enjoy, or chill and enjoy. The quantities can be adjusted to your liking.
