Ingredients for 4 servings:
- 1 kohlrabi
- 1 red bell pepper(s)
- 1 bunch of spring onions
- 1 liter vegetable broth
- 1 tbsp lemon juice
- 1 pinch of chili powder
- 100 ml soy cream OR:
- 2 tbsp crème fraîche
- olive oil
- possibly sauce thickener
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes
Finely chop the spring onions. Peel and finely dice the bell peppers and kohlrabi. Add a little olive oil to a pot and sauté the onions briefly. Then add the remaining vegetables and continue sautéing, stirring frequently. Pour in the broth and simmer for 10 minutes. Season with lemon juice, salt, and chili, and finally add the soy cream. Bring to a boil briefly and serve. If you prefer the soup thicker, you can thicken it. But in my opinion, it’s not absolutely necessary.
