Chinese cabbage in buttermilk-mustard dressing

Ingredients for 2 servings:

  • ½ head of Chinese cabbage
  • ½ red bell pepper(s)
  • 1 cucumber(s), 10 cm
  • 2 tbsp cashew nuts
  • 150 g buttermilk
  • 1 tbsp mustard
  • 2 tbsp vinegar
  • 1 pinch(s) of sugar
  • some chives, fresh, chopped
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash and cut the Chinese cabbage into thin strips. Wash, halve, deseed, and dice the bell pepper. Wash and slice the cucumber. Roast the cashews in a pan without oil. Mix the dressing together and season to taste. Place the Chinese cabbage, bell pepper, and cucumber on plates or in bowls and pour the dressing over them. Sprinkle the cashews on top.
