Ingredients for 4 servings:

  • 2 garlic cloves, squeezed
  • 1 bunch parsley, flat
  • 500 g minced beef
  • 100 g fig(s), dried
  • 1 egg(s)
  • 50 g pine nuts, roasted
  • tsp harissa
  • salt and pepper
  • chili powder
  • Oil, for frying
  • 5 zucchini, cut into rings
  • 2 can/n tomatoes, chopped
  • Harissa
  • cumin
  • salt and pepper
  • chili powder
  • 1 tsp sugar

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

spicy rolls that go well with Couscous “Orientale”

Preparation of the minced meat rolls: Finely chop the parsley, press the garlic, and finely dice the figs. Combine the minced meat, egg, spices, breadcrumbs, and parsley to form a smooth, savory mince dough. Form into thumb-length rolls and fry them in a little oil for 5-6 minutes on all sides. Place on a deep plate and cover with a second plate to keep the rolls warm while you prepare the sauce. Preparation of the sauce: Sauté the onion rings in the remaining oil until translucent, add the chopped tomatoes, and season with spices and sugar. Simmer for 10 minutes. After 8 minutes, add the rolls and any meat juices, and reheat the rolls. Serve with Oriental Couscous, for example.
