Ingredients for 1 servings:

  • 100 g dark chocolate
  • 4 eggs
  • 1 packet of vanilla sugar
  • 100 g flour
  • 100 g cashew nuts
  • 200 g banana(s), ripe
  • 100 g honey
  • 100 g chocolate coating

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Melt the chocolate in a saucepan over low heat. Whisk the honey, vanilla sugar, and eggs until frothy. Then add the melted chocolate. Mash the bananas with a fork and chop the cashews (if you prefer smaller pieces, briefly chop them in a blender). Tip: For a better flavor, toast the cashews briefly in a pan without oil beforehand. Add both ingredients to the batter along with the flour and mix. Preheat oven to 170-180 degrees Celsius (348-356 degrees Fahrenheit). Pour the batter into a small baking pan (mine is about 15 x 25 cm) and bake for 20 minutes. Once the cake is ready, melt the chocolate coating and spread it over the cake. Then let it cool. To save calories: This cake also tastes delicious without the chocolate topping – 2650 kcal for the entire cake! For 16 slices, that’s about 195 kcal per slice.
