Ingredients for 1 servings:
- 1 fig(s), fresh, ripe
- 1 tbsp, heaped mascarpone
- some agave syrup or honey to sweeten, to taste
- 3 mint leaves, fresh
- 1 tbsp pistachios, unsalted, chopped
- ½ tbsp agave syrup or honey
- some mint leaves for garnishing

easy and fast
Wash and dry the fig, and quarter it from the stem end, but do not cut all the way through. Finely chop the mint, mix it with the mascarpone, and sweeten to taste. Fill the fig with the mixture. Place the stuffed fig on a plate. Mix the pistachios with agave syrup and scatter them around the fig. Garnish with mint leaves.
