Ingredients for 12 servings:

  • 200 g chocolate (After Eight bars, one pack)
  • 250 g flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 egg(s)
  • 90 g sugar
  • 80 ml oil
  • 250 ml buttermilk

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Crush the After Eight bars (I always quarter them), mix with the flour, baking powder, and baking soda. Whisk the egg in a small bowl, add it to the mixture along with the sugar, oil, and buttermilk, and mix well. Bake at 180°C for about 20-25 minutes. Mix 150g of powdered sugar, 2-3 teaspoons of hot water, and 2-3 drops of peppermint oil until smooth. Dip the top half of the muffin into the mixture and garnish with a peppermint leaf.
