Ingredients for 1 servings:
- 1 large chicory
- 2 tomatoes, sun-ripened, if possible from the can
- 1 tsp honey
- 2 tbsp balsamic vinegar
- 3 tbsp olive oil
- Salt
- pepper
- herbs (salad)
- n. B. Cheese (Chester)
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Halve the chicory, remove the stem, and cut into bite-sized pieces. Rinse briefly under running water and let drain. Wash the tomatoes, cut them into eighths, and add them to the chicory. The tomatoes should be really sweet and aromatic; otherwise, use canned tomatoes. Make a dressing with the remaining ingredients and mix it into the salad. Let it sit for a moment. If you like, you can also slice some cheese and mix it in. I like to serve this with a slice of hearty whole-grain bread as a snack or as a side dish, for example, with turkey schnitzel and rice.
