  • 100 g sugar or rock sugar
  • 4 vanilla pods
  • Rum as needed

This recipe is ideal for using up broken vanilla pods or slightly older, hard pods. It’s essentially nothing more than rum candy, but tailored for baking with significantly more vanilla than usual. Split the vanilla pods and place them in a small bottle along with the sugar and rum. Shake occasionally over the next few days to dissolve the sugar. The longer the rum-vanilla can steep, the more intense the flavor will be. As with rum candy, you can always top up with rum and sugar, but you should also add a new vanilla pod every now and then to preserve the flavor. I buy a bag of broken vanilla pods from Madavanilla once a year; that lasts me well throughout the year, even if I’m relatively lavish with them.
