Green Bean Pasta

Ingredients for 4 servings:

  • 500 g pasta (e.g. penne, fusilli)
  • 500 g beans, green
  • 125 g bacon or ham
  • 5 sprigs savory, fresh
  • 2 onions
  • 2 garlic cloves
  • chili flakes
  • salt and pepper
  • optionally grated cheese for sprinkling

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Pasta with green beans

Wash and trim the green beans and cut them into pieces. The pieces should be about the size of the cooked pasta. Finely dice the bacon. Peel and dice the onions and garlic. Pick the leaves from 2 sprigs of savory and chop them finely. Add 3 sprigs of savory and the beans to boiling salted water and cook for about 8 minutes. Meanwhile, fry the bacon in a hot pan without oil until slightly crispy. Add the onion and garlic and sauté. After 8 minutes, add the pasta to the salted water with the beans and cook for about 8 minutes according to the package instructions. Just before the end, add a few spoonfuls of pasta water to the pan so that the onion and bacon mixture becomes slightly creamy. Season to taste with chili, pepper, a pinch of salt, and the chopped savory. Drain the pasta and beans, discarding the savory. Immediately add the onion and bacon mixture to the still slightly moist pasta and stir well. If you like, you can sprinkle grated cheese (e.g. Parmesan) over the pasta.
