Bacon turkey steaks with gnocchi in spinach and gorgonzola sauce

Ingredients for 4 servings:

  • 800 g turkey meat
  • Salt to taste
  • Pepper to taste
  • Oil for frying
  • 500 g gnocchi
  • 250g Gorgonzola
  • 200 ml cream
  • 1 garlic clove(s)
  • 80 ml vegetable stock
  • 400 g spinach
  • 4 slice(s) bacon, thin
  • ½ tsp nutmeg, grated
  • 1 tsp oregano

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

First, cut the turkey into 4 equal pieces and season with salt and pepper. Then, sear them on both sides in a pan with oil. Meanwhile, cook the gnocchi in a water bath according to the instructions and place them in a large casserole dish. In another pan, heat the Gorgonzola, cream, and garlic clove with a little vegetable stock. Add the spinach. Once the meat has cooled slightly, wrap each piece in a strip of bacon. Once the cheese has melted, stir the sauce and season with salt, pepper, and nutmeg. Pour the sauce over the gnocchi and spread it out, then add the meat. Cook at 175 degrees Celsius for about 35 minutes, until the bacon is crispy. Sprinkle with tarragon and serve.
