Low-fat chocolate truffles

Ingredients for 1 servings:

  • 180 g chocolate, dark chocolate with at least 70% cocoa content
  • 180 g cream cheese, very low-fat
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
  • 15 g chocolate (dark chocolate), grated

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Break the chocolate into pieces and melt gently in a double boiler. In a bowl, combine the cream cheese, sugar, and vanilla. Let the melted chocolate cool slightly, then stir it into the cream cheese mixture. Cover the mixture with plastic wrap and refrigerate for 1 hour. Line a baking sheet or similar with parchment paper. Sprinkle the grated chocolate onto a plate. Scoop out a teaspoon of the cream cheese and chocolate mixture, roll each into a ball, roll in the grated chocolate, and place on the baking sheet. Cover with plastic wrap and return to the refrigerator until firm. Place the balls in chocolate capsules and refrigerate until ready to eat. Tip: I added a little rum, cherry liqueur, or amaretto. Dipped the balls several times in melted chocolate looked even better.
