  • 70 flowers (lilac flowers), purple
  • 50 g sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

purple decorative sugar, e.g. for desserts and pastries

Pick the lilacs on a sunny day, once the dew has dried. Pluck approximately 70-80 blossoms from the stems. Make sure to only pick the colored petals, not the entire calyx. Grind the petals with about 1/3 of the sugar in a mortar and pestle, then add the remaining sugar and briefly pound everything together. Spread the moist sugar thinly on a suitable surface and let it dry in the sun for two to three hours. Stir well every now and then, breaking up any lumps. Place the completely dry sugar in a screw-top jar and seal tightly.
