Curry pan with zucchini

Ingredients for 2 servings:

  • 300 g pork, shredded
  • 1 zucchini
  • 2 tbsp curry powder
  • 250 ml vegetable broth or meat broth
  • 200 ml cream or milk
  • Cornstarch (Mondamin)
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat the oil in a pan and brown the meat. Season with salt and pepper. Wash the zucchini, slice it, and then briefly fry it in the pan with the meat. Sprinkle the curry powder over the meat and zucchini and deglaze with the vegetable stock. Now add cream (or milk) and simmer for about 10-15 minutes. Season with salt, pepper, and curry powder if desired. Thicken the sauce slightly with Mondamin if desired and simmer for another minute. Serve with rice and salad.
