Chicken cocktail with pineapple and mushrooms

Ingredients for 4 servings:

  • 150 g chicken, cooked
  • 2 slices of pineapple
  • 1 can of mushrooms
  • 4 tbsp mayonnaise
  • 4 tbsp cream, whipped
  • n. E. Tomato ketchup, approx. 1 – 2
  • n. B. Brandy, approx. 1 – 2
  • Salt
  • Sugar
  • lemon juice
  • pineapple juice
  • curry
  • n. B. Lettuce leaves for serving
  • n. B. cocktail cherry(s)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut the chicken into strips. Drain the pineapple and mushrooms and finely chop them as well. Whisk all other ingredients together to make the cocktail sauce and season to taste. Fold in the chicken, pineapple, and mushrooms. Place a small lettuce leaf in each cocktail glass and pour in the cocktail. Garnish with cocktail cherries and serve chilled.
