Fruity turkey salad

Ingredients for 2 servings:

  • 250 g turkey meat, fully cooked, e.g. leftovers from the Christmas turkey
  • 3 tbsp mandarin orange(s), peeled, in wedges or pineapple cubes or peach wedges
  • some juice from the chosen fruit variety
  • 2 tbsp mayonnaise
  • Salt and pepper, white

Working time approx. 10 minutes; Rest time approx. 10 minutes; Total time approx. 20 minutes

simple, quick use of leftovers

Cut the cold turkey into fine cubes, season lightly with salt and pepper, then toss with the fruit. Mix a marinade of mayonnaise and a little fruit juice, then pour it over the meat and fruit mixture. Mix everything well and let it marinate for about 10 minutes. Serve with baguette or freshly toasted white bread. Leftover chicken can also be used quickly and deliciously in the same way.
