Ingredients for 1 servings:

  • 12 biscuits (light mini double biscuits)
  • 24 sugar pearls (eye decoration)
  • 12 mini marshmallows
  • 12 sugar pearls, red
  • Food coloring, red
  • 100 g white chocolate coating
  • 1 tbsp desiccated coconut

Instructions

Working time approx. 15 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 15 minutes

Melt white chocolate over a bain-marie and color half of it with red food coloring. Place sandwich cookies on a chip stick and dip 1/3 of each in red and white chocolate. Using a little white chocolate, stick on the eyes and nose, and attach a marshmallow to the side for a pointed hat. Sprinkle with coconut flakes for the beard and snow on the Santa hat, and let set overnight. Makes 12 cookies.
