Salad dressing herbs à la Didi

Ingredients for 25 servings:

  • 4 cl olive oil with truffle
  • 2 cl white wine vinegar
  • 1 tsp white pepper, ground
  • 1 tsp sea salt
  • 2 tbsp forest honey
  • 2 cl water
  • 1 tsp onion powder
  • 1 tsp thyme
  • ½ bunch chives
  • ¼ bunch parsley
  • 1 tbsp mustard, medium hot

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Combine the olive oil, white wine vinegar, and water. Season with salt, pepper, and onion powder. Add the wild honey and mustard and mix until a slightly creamy consistency is reached. Strip the thyme leaves. Finely chop the chives and finely chop the parsley. Add the herbs to the dressing and stir vigorously. Store in a tightly sealed bottle for later use.
