Ingredients for 4 servings:
- 300g penne
- salt water
- 500 g tomatoes, ripe, firm, aromatic variety
- 150 g blue cheese, not too ripe, a strong variety
- 200 g sour cream
- 2 tbsp olive oil
- ½ bunch basil
- 25 g pine nuts
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Bring plenty of salted water to a boil. Cook the penne according to the package instructions until al dente, then drain. Meanwhile, wash the tomatoes, quarter or eighth, and deseed them. Purée the blue cheese with the sour cream and olive oil in a blender, then season with salt and pepper. Wash the basil and slice it into strips. Roughly chop the pine nuts and toast them in a dry pan until golden brown. Mix everything with the pasta and season to taste.
