Rice and herb frikos

Ingredients for 4 servings:

  • 300 g jasmine rice
  • 1 handful of fried onions
  • 1 bunch of thyme
  • 1 small leek(s)
  • 3 mint leaves, depending on size
  • salt and pepper
  • Broth, granulated
  • 3 eggs
  • some breadcrumbs
  • some soy sauce
  • some oil or clarified butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cook the rice in well-salted water. In the meantime, crumble the fried onions a little more if they’re too coarse. Finely dice the leek, finely chop the mint, and strip the thyme leaves from the stems. Mix everything together. Transfer the cooked rice to a large bowl and let cool. Mix with the eggs, breadcrumbs, and the herb-fried onion mixture. Season to taste with salt, pepper, granulated stock, and soy sauce, if desired. Form patties and fry in oil or clarified butter until golden brown. Serve with lamb’s lettuce or a green salad. They’re still delicious the next day.
