Tomato vinaigrette

Ingredients for 4 servings:

  • 180 ml oil (good olive oil)
  • 60 ml vinegar (red wine vinegar)
  • Salt and pepper to taste
  • 1 m.-large tomato(s), ripe, (peeled, pitted & pureed)
  • 1 tbsp tomato paste
  • 3 tbsp crème fraîche or sweet cream

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl. Add the tomato and tomato paste and mix well. Finally, stir in the crème fraîche or cream and season to taste. Tip: If you like, you can also add a few chives.
