Mashed potatoes with Parmesan

Ingredients for 4 servings:

  • 325 g potatoes
  • ¾ tsp salt
  • ½ tsp sweet paprika powder
  • 15 g margarine
  • 60 ml milk, hot
  • 1 tbsp Parmesan, grated
  • 1 tbsp cream, whipped, unsweetened
  • ½ tsp salt
  • Water
  • Parsley for sprinkling

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

makes 4 side dish portions

Peel the potatoes, cut into chunks, and bring to a boil with just enough water to cover. Add 1/2 teaspoon of salt and simmer over low heat, covered, for about 20 minutes until tender. Drain and steam. Mash the potatoes, adding the butter, 3/4 teaspoon of salt, paprika, and milk. Stir in the Parmesan cheese with a spoon. Finally, fold in a tablespoon of whipped cream. The cream makes the mash lighter. Serve sprinkled with parsley. Meatballs go particularly well with this dish!
