Quick herring salad

Ingredients for 4 servings:

  • 1 pack of fish fillet(s) (matjes fillet)
  • 1 medium-sized onion(s), diced
  • 1 apple, sour, peeled, pitted, diced
  • 2 gherkins
  • 2 eggs, hard-boiled, diced
  • 1 cup sour cream
  • some cucumber juice
  • Vinegar
  • Oil from the matjes packet
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Drain the herring fillet and cut into small pieces. Mix with the diced apple, onion, gherkins, and egg. Stir in the sour cream, about 1 tablespoon of gherkin juice, and a little oil from the herring packet. Let it marinate for at least 1 hour, then season with a little vinegar, salt, and pepper, if desired. Serve with hot boiled potatoes.
