Avocado-pineapple tartar

Ingredients for 16 servings:

  • 120 g pineapple, peeled
  • 3 limes
  • 2 avocados
  • 2 shallots
  • 1 tbsp ginger
  • 8 tbsp olive oil
  • 3 tbsp apple cider vinegar
  • 3 tbsp Balsamic vinegar, white
  • Salt
  • black pepper
  • Honey
  • 1 red chili pepper(s)
  • Coriander stalks

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

a fresh alternative to my well-known avocado Granny Smith tartar

Peel the avocado, remove the pit, and scoop out the seeds, then add lime juice. Peel the pineapple and dice it into small cubes. Finely dice the shallots. Finely dice the ginger and the deseeded chili pepper. Combine everything, add the oils and vinegars, and mix well. Season with sugar, salt, and pepper. Finely chop the cilantro and fold in.
