Pureed persimmon with Greek yogurt

Ingredients for 5 servings:

  • 2 thick persimmons, ripe
  • 2 cups Greek yogurt, sweetened
  • e.g. cream

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Peel the persimmon, chop it into pieces, and puree it in a blender. Layer the persimmons in ice cream bowls, alternating with the yogurt. Garnish with whipped cream, if desired. Then refrigerate for one hour. Serve cold.
