Ingredients for 4 servings:

  • 2 thick eggplants
  • some salt
  • 120 g cooked ham
  • 4 slices of cheese (Provolone)
  • 4 basil leaves
  • some pepper, from the mill
  • 2 eggs
  • some flour
  • some breadcrumbs
  • Sunflower oil, for frying

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes

Cut the eggplant into 8 slices, approximately 0.5 cm thick. Season with salt and let rest for 30 minutes. After this time, rinse the eggplant slices under running water and dry on kitchen paper. Arrange ham, cheese, and 1 basil leaf on 4 eggplant slices and season with pepper. Place an eggplant slice on each slice, then coat in flour, then in egg, and finally in breadcrumbs. Heat plenty of oil in a pan and fry the eggplant for 2-3 minutes on each side until golden brown. Remove from the pan and drain on kitchen paper. You can also bake the eggplant in an oven preheated to 200°C for 20 minutes. Turn halfway through the baking time.
