Emily's semolina cheesecake

Ingredients for 6 servings:

  • 200 g flour (wheat flour)
  • 1 tsp, leveled baking powder
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 100 g margarine
  • 1 egg(s)
  • 225 g quark
  • 1 pack of flavoring (Citroback) + 2-3 dashes of lemon juice
  • 4 tbsp semolina
  • nutmeg
  • 3 eggs
  • 100 g sugar
  • 150 g sour cream
  • 200 g whipped cream

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

For the pastry base, mix the flour and baking powder and sift. Add the sugar and vanilla sugar, as well as the egg and margarine. Using a hand mixer (dough hook), mix everything into a dough. Grease a springform pan (26 cm diameter) and shape 2/3 of the dough into a ball, then roll it out on the springform pan base. Shape the remaining dough into a roll and place this around the edge of the springform pan, forming a 3 cm wide edge. For the filling, fluff the quark in a mixing bowl. Then separate the eggs. Slowly add all of the ingredients (except the egg whites!) to the quark, mixing gently with a spatula. Beat the egg whites until stiff peaks form and fold in. Then pour the entire mixture into the prepared pan and smooth it out. Bake on the oven rack at 160°C (gas mark 3) for about 1 1/2 hours. Do not open the oven during the baking time!!! After baking, turn off the oven and let the cake cool for about 1 hour with the door open. Then remove the ring mold and decorate as desired! Enjoy!
