Baked plum tomatoes with herb and goat cheese crust

Ingredients for 4 servings:

  • 6 tomatoes (plum tomatoes, also called cooking tomatoes)
  • 150 g cheese (goat cheese – goat roll)
  • 3 tbsp herbs, frozen 8 herbs or Italian herbs
  • 1 clove(s) garlic, squeezed
  • olive oil
  • salt and pepper
  • Sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Halve the tomatoes and brush the insides with olive oil. Sprinkle each with a pinch of salt, pepper, and sugar and place them cut-side up in an ovenproof dish. Bake in the oven at 175°C for about 30 minutes, until the tomatoes are soft and slightly dry. Mix the goat cheese with the herbs and place a dollop on each tomato. Bake in the oven until the cheese has melted. This takes about 5-7 minutes. Serve with baguette or ciabatta bread.
