Quick leftover salad

Ingredients for 2 servings:

  • 50 g sausage of your choice (e.g. Vienna sausage)
  • 50 g cheese (e.g. Gouda, Emmental, …)
  • 75 g corn kernels
  • 75 g noodles, small, cooked (e.g. soup noodles)
  • 50 g onion(s) (shell onions)
  • e.g. mayonnaise
  • 4 tbsp oil
  • 4 tbsp vinegar
  • salt and pepper

Working time approx. 10 minutes; Total time approx. 10 minutes

Use leftovers from cold platters, buffets…

Finely chop the sausage, cheese, and pearl onions (and possibly the pasta, if it isn’t already finely chopped). Mix with the corn kernels and pasta. For the dressing, whisk the mayonnaise with vinegar and oil until creamy. Add salt and pepper, and mix with the sausage and cheese mixture. Other leftovers (different or different types of sausage and cheese, pickles, cucumber, tomatoes, etc.) can also be used.
